Why do we create chocolate without gluten?

Gluten is a substance consisting of 2 proteins: Gliadin (Gliadin) and Glutenin (Glutenin). The problem is created by Gliadin.

The very word Gluten comes from the Latin language, meaning "glue". Allergy to gluten (celiac disease) occurs in 1% of the population - this is 1 person out of 100-150. Immunity of such people perceives the protein of matter as alien, forcing the body to fight it. Moreover, even over small doses of gluten (0.1 g) can activate serious allergies.

Since gluten is consumed with food, the stomach suffers first of all - the bowel functions are disrupted, the level of assimilation of sugars, fats, vitamins and minerals decreases. With a constant abuse of gluten, there is an accumulation of excess weight, mainly on the stomach.
